Plantain and Egg Fritata Recipe

Hello Beautiful people, i trust you are all doing great and also enjoying the holiday? Today's recipe is a perfect match made in the kitchen (egg and plantain fritata) and it is a meal which the whole family can enjoy either as breakfast or brunch especially for kids who really don't like to eat their vegetables, this is a perfect way to incorporate vegetables in their meals.
Let's get familiar with the ingredients and also this recipe can serve 2-3 persons.


  • 1 medium sized ripe plantain. 
  • 3 eggs. 
  • 2 chopped smoked chicken sausage. 
  • 1 cup of chopped spring onions. 
  • 1/2 cup of chopped green beans and carrot. 
  • 1/2 cup of chopped tomatoes. 
  • 1/3 cup of chopped onions. 
  • 1/2 cup of chopped green pepper. 
  • 1 & 1/2 cup of coconut oil.
  • 2 medium sized scotch bonnet. 
  • Salt. 
  • Preferred seasoning.

  • Cut your plantain in small circles, sprinkle a little bit of salt in it and grill. 

  • Add 1 tablespoon of oil to the pan, pinch of salt, all the vegetables, sausage, seasoning  into the pan, stir and allow to simmer for 5 minutes then turn off heat.

  • Break eggs into a clean large bowl. 

  • Whisk the eggs. 

  • Add stir-fry to whisked egg and stir.

  • Get a smaller pan, grease with half tablespoon of coconut oil and pour in the combined eggs and stir-fry. 

  • Place grilled plantains on top the egg and stir-fry mixture. 

  • Place in a 270c oven and allow to bake for 15-20 mins. If you don't have an oven you can use your gas cooker/stove on a very low heat. It also takes the same time to bake and to be sure your fritata is ready, simple pass a toothpick through the middle and if the toothpick comes out dry that means your fritata is ready to be served. 

I had my egg and plantain fritata with a Cup of Lipton tea and pineapple chunks on the side.
