No Oven OatMeal Cookies Recipe

Aside from the consumption of fizzy drinks, we also indulge in snacks like biscuits, cookies, scones, etc which does damage to our waistlines and it either put a stall on our weight loss or lead to weight gain. After my last post on Oatmeal Biscuits, if you missed it you can check Oatmeal Biscuit Recipe i got a few messages and even calls on how to bake without an oven and on today's post "Oatmeal Cookies Recipe" you are going to learn how to bake without the use of an oven.

  • 1 cup of blended Oatmeal.
  • 1 egg.
  • 1 & 1/2 table spoon of coconut oil.
  • 2 tablespoons of skimmed milk.
  • 1/4 cup of dried currant.
  • 1 tablespoon of brown sugar.
  • 1 teaspoon of cinnamon (optional).
  • 1/2 teaspoon of baking powder.
  • 1 teaspoon of vanilla flavor. 
  • Combine all dry ingredients (oatmeal, skimmed milk, dried currant, brown sugar, cinnamon and baking powder), stir and set aside. 
  • Combine all wet ingredients (egg, coconut oil and vanilla flavor) and mix together. 
  • Pour wet ingredients into dry and mix together then knead for 5 mins.
  • Refrigerate for 30 mins, cut into 15 part and make into round balls then use your hands to flatten each.
  • Place baking sheet in a pan but if you don't have a baking sheet simply grease a plan paper with oil and use in place of a baking sheet.
  • Place each cookie dough in the pan.
  • In place of an oven, add sand/small stones in a pot and use any available object to elevate the pan from the sand, place on a stove/cooker and allow to heat for 35 mins. 
  • Place pan containing cookie dough in the pot, cover and allow to bake for 30 mins.
PS: do ensure your sand is being heated while preparing your cookie dough to save time.

This cookie can serve as a snack or quick breakfast.
