Cabbage Fried Rice Recipe

In most Nigerian homes, it is a norm to have rice as Sunday's lunch. Rice is high in carbohydrate and when eaten in excess can do a lot of damage to
our waistlines and also lead to weight gain.
To keep your calories in check and still enjoy "Sunday's Rice" with your family, here is a perfect substitute.

  • Cabbage (replacing rice) 
  • Carrots
  • Green pepper 
  • Onions 
  • Green beans 
  • Red pepper 
  • Oil
  • Fish
  • Liver
  • Thyme
  • Curry
  • Seasoning
  • Chop all vegetables and set aside. 
  • Season liver with thyme, curry, salt, seasoning  and allow to cook until tender then chop into small pieces. I couldn't get liver at the market so I opted for beef. 
  • Add a table spoon of olive/coconut/almond oil in a non stick  pan and allow to heat. 
  • Add salt to taste, onions, carrot, green beans, red pepper, chopped liver and three table spoons of the liver stock.
  • Add thyme, curry and seasoning to taste then allow to cook for 5mins.
  • Add green pepper and cabbage, stir until the cabbage is properly mixed with other vegetables, cover for 2-3mins, turn off heat and your cabbage fried rice is ready. 
  • Clean fish and marinate with pepper, thyme, nutmeg, curry, salt and desired seasoning then allow to grill in the oven. 
My Cabbage Fried Rice is served with a glass of freshly squeezed orange juice. Try as much as possible to make your own juice as packet juice do contain sugar and artificial sweeteners.
